500g frozen peas
2 onions (thinly sliced)
2 Tbsp ghee
Pinch salt
1/2 tsp white pepper
1 Tbsp ground garlic paste
1 tsp ground green chillies
Handful chopped chives
1 1/2 Tbsp za’atar spice
400g feta cheese
Handful fresh mint leaves (chopped)
50pc medium Springroll pastry

Plain yoghurt
Pinch salt & sugar
1 tsp garlic paste
Olive oil

Step by Step Instructions

Step 1

1. Steam peas till just tender.


Step 2

 In a pan, heat ghee and saute onions till golden.
Add in garlic, chillies, spices & chives; stirring for half a minute.
Add in peas and stir fry for 2min.

Step 3

Remove from heat and crumble feta over.
Add in chopped mint & mix well.

Step 4

Fill into pastry & seal well with lai.
Freezer suitable now. When fried, dust with a little za’atar spice if you wish.
